Windows 11 font colour issue on menus

Imaging Windows 11 using un-edited ISO from Microsoft and a task sequence in MDT, PC is joined to the domain in the base "computers" folder.

 

On logon by users we are seeing a strange font colour issue whereby the text is hidden on Explorer Menus.

 

 

Anyone know if this is fixable via a Group Policy or why this might be happening?

Out of curiosity, what happens if the key combo of Shift-Ctrl-Win-B is pressed? This restarts DWM and sometimes clears odd display issues like this.
