SharePoint shared resource folders - layout ideas

Hello, sorry this is a re post, the question went cold.

 

We want to move our shared Curriculum resource folders (French, History, Geography etc) to SharePoint. I am thinking to have a site called 'Curriculum Files' containing Document Libraries for each subject, then 2 folders ('staff' and 'students') in each Document Library. But with Staff having edit (so they can save things) means they can delete/rename the whole top level folder. You can't do 'This folder only' permissions in SharePoint so what's the solution?

Instead of using multiple document libraries we used a sub site for each department, this means they can have their own landing page with department specific information displayed. Each site has a tile on our main site which simply links to the subsite and works quite well. Taking this approach has allowed us to be very specific with our permissions if we want to be as we can simply break inheritance on the sub site level and put new, unique permissions in place.
