I'm fairly new to google admin but was wondering if there was a way to automate disk cleanup on the chromebook. School has limited onsite support don't fancy remoting onto each machine to set the task.

Just be aware that if you set it not to store user data the chromebook only allocates 2gb of storage to the logged in user, which can easily be filled up if for example there are a few apps that need to be installed on user log on or extensions or some downloads etc.

We enabled it, had massive problems with users constantly running out of room, and promptly disabled it never to be touched again.

Since gone 1:1 now so no longer running into storage issues as generally, only 1 user is logging into each Chromebook.
