Just looking at potential job lists for the summer.

 

I’m currently running server 2016 on the majority of my vms, any new ones I’ve spun up have been 2019, do you think it is worth upgrading all of them to 2019 or is it worth the wait till the next major Windows server release?

I've only got 1 2016 VM left (and that's only because the software vendor doesn't yet support 2019). It's worth upgrading to 2019 just for the time savings when installing windows updates that MS seem to have no interest in fixing it in 2016...

It needs high performance specs to use comfortably. I've tried it on servers with older but not under powered hardware and it has just been a lagfest

 

Were you using multi core CPU/s and/or assigned multiple cores if deployed to VM? The only time I've experienced lagfest with Server 2019 is when VMs have only been given single cores, upping to 2 cores immediately fixed the lag isue.

Yeah I agree we increased our test direct access server up to two cores today and instantly saw improvement

I recently upgraded our DC's from Server 2008 R2 to Server 2019. Went relatively smooth. Not seen any performance issues with 2019 whatsoever and I've not given them particularly high specs.

 

If you're on Server 2016 and don't have any real need to upgrade to Server 2019 at this point then I'd say leave it for now as the benefits would be less.
