Ubiquiti EdgeMax Core Switch Usage

I've got a project coming up where I'll be removing some very old EoL Cisco switches and was looking at replacing them with Ubiquiti EdgeMax switches and using the EdgeSwitch 16XG for the core switch as all the other links are fibre and will connect back to this. I was thinking of maybe using 2 of these switches with links from all edge switches going back to both so in the event of a core switch failure the other would still provide access.

 

Has anyone out there used Ubiquiti's EdgeSwitch range for this sort of project? Does anyone run a complete Ubiquiti EdgeSwitch infrastructure?
