Please can someone help me how to backup office 365 data? Particularly one drive?

On top of the backup/versioning built into 365, could you not sync onedrive for example to a local folder and back that up via just about anything?

I'm considering putting a Win 10 VM on our backup server and setting the Files on Demand to keep a local copy of everything.

Don't.

 

Use inbuilt features and trust Microsoft for the fact they have multiple copes across various datacentres.
