I can install it, well, on some computers, others randomly fail.

 

My question is: how do I deploy it. How do I make sure all computers have it for all users? Why isn't it a thing in GPO like MSI is?

you should be able to deploy it with a powershell script as all the bat file does it run the ps1 file.

Right... random question... why do you have to copy these files to the machines? Can you not just run them off a network share?

 

Might just set it to copy for the time being and then run the install in a few weeks.

I pushed it out via SCCM and it worked great. It seems to be lacking quite a lot of the MinecraftEdu features though, or am I missing something?

Have you linked SCCM to your business store? I found that it just wouldn't work properly without this. You can download the offline installation files for some store apps and just distribute that but it's much easier if they are linked. You need to link them together with Azure AD.
