Zero Internet Lab - Need Science Project Ideas

We have a computer lab that has no connection to the internet. We currently plan on using it for the following classes, but I would love any Science / Engineering ideas that the lab could be used for daily. ((I'm fighting for the lab to be a place to create and not turned into another assessment/testing location))

• Music Composition
  
• Digital Art/ Illustration

• AD and DNS / DHCP (if you wanna teach server side of things)
  
• Imaging
  

 

You don't need any internet connect for any of these, just make sure the computers are linked via LAN
