Somehow in one specific policy I've blocked it during testing and I don't know how

Do you know when you made the change or when it stopped working?

 

You can list your GPOs by date and time to see the last time they were modified:

If you haven't made too many changes you might be able to find which GPO is causing it and recall/remember the change you made?

Yep, this was it so I just hid the unwanted drives instead using a custom ADM.

Which setting is 'restricted' referring to in this context - I'm not looking at it right now but I recall there are three settings?

The Group Policy is located

 

Computer Configuration > Policies > Administrative Templates > Windows Components > File Explorer

 

"Prevent access to drives from My Computer"

 

If you are restricting the C Drive search doesn't work.
