It's quite easy to get a stable shot by just resting the phone on a solid surface which is what I guess he did here.. maybe on an airport trolley for the motion shots... Don't think this would be too hard to do on an iPhone..

Motion shots were done using the airports moving walkways. For the shot with him at the bottom of the escalator he attached his phone to the handle of his bag and put that on the escalator.

 

There is an out take of him running up the escalator to catch up with his bag before it reached the top and fell over.
