can I remote onto the Ubuntu server to fix it if so how?

Did you install ssh as part of the installation? If yes you could try connecting via that (you will need to install putty if you're using a windows client).

 

ssh username@serverIPAddress

No I did not install ssh, I cant think of another way to remote onto the server.

I've tried holding shift during boot to try to access the grub menu that did not work.

After 3 hours of trying to get Ubuntu working I have finally found a fix. I've now installed Windows and had no issues.

 

I was trying to use Linux to reduce my dependency on Windows but all it did was to stop my computer from working.

Might be quicker to just reinstall, and include ssh this time?

That's a shame. For the right application Linux can be great. I hope you have another go in the future, and that you have better luck that time!

 

For you first installations, always include Ubuntu's built in SSH server. That way you can connect and make changes even if you can't see anything on the display.

Sadly, this is how it ended up for me after ~5 years of using Linux distros, all thanks to AMD/ATI and their rubbish linux drivers after a computer upgrade.

 

I always install SSH by default as you never know when/if you need it and it has saved me a number of times.

I refuse to blame my hardware after all windows was able to work with the installed graphics \ monitor without any configuring on my part. Linux on the other hand want me to install ssh and reconfigure other stuff just to get an image displayed after a complete. install. What I don't get is that Ubuntu worked with my graphic \monitor setup during the installation process so why after the completion of the installation does Ubuntu want to reset the resolution\refresh rate from one that works to a setting that does not work?

There's a boot param that can set the video mode vga=xxx

Do you see the grub bootloader?

 

I had problems with this with previous versions of ubuntu and the hardware I was installing it on. I played around with that boot setting and was able to get in working. I wouldn't give up on linux there is a huge learning curve, other options are to try different distros MINT is pretty good and Arch is very good but it requires alot more linux knowledge so not good for beginners. Also if you have time on your hands Linux From Scratch is a great way to learn how its all pieced together.
