I currently have exchange 2007 and o365 setup. I found out that enabling email for the pupils in o365 is a disaster as it crashes without the mailbox first being migrated.

I was thinking of upgrading my local exchange2007 to 2010 and enabling hybrid. Will this allow pupils to access their email through o365 without me having to migrate the mailbox immediately? Is it hard to do this retrospectively?

Will I still have to setup a real (not self signed cert) for the OWA?

Hi,

based on what you have the creation of mailboxes should not create in Office 365 because (assuming you have DirSync) all the information about the pupils mailboxes are copied to Office 365 so when you liense the user it knows they already have mailbox on-prem.

Instead of upgrading the whole of your on-prem 2007 environment you can just put a single 2010 server in (hub transport server) which you then configure as a Hybrid to Office 365/Exchange Online and then you can migrate mailboxes.
