Rawns Posted July 3, 2013 Posted July 3, 2013 It's BBQ season again! For those who BBQ or slow roast big hunks of meat, what do you use as a dry rub? This one is pretty epic but I'm curious to know other Geekers recipes. This one is awesome! 1/4 cup dark muscavardo sugar 1/4 cup white sugar 1/4 cup paprika 1 Tbsp black pepper 1 Tbsp coarse sea salt 1 Tbsp cumin 1 Tbsp chili powder 1 Tbsp garlic powder 1 Tbsp onion powder 1 Tsp cayenne pepper Rub in thoroughly and leave overnight!
featured_spectre Posted July 3, 2013 Posted July 3, 2013 Ingredients: 2 tablespoons salt 2 tablespoons sugar 2 tablespoons brown sugar 2 tablespoons ground cumin 2 tablespoons chili powder 2 tablespoons freshly ground black pepper 1 tablespoon cayenne pepper 1/4 cup paprika Increase quantities in proportions.
HaleStorm Posted July 3, 2013 Posted July 3, 2013 I've never tried dry rubs, i normally go for mop sauce and keep basting the meat as it cooks/smokes
rickjames Posted July 3, 2013 Posted July 3, 2013 Not a rub but you should try the sauces from this guy The Rib Man His food is so good
featured_spectre Posted July 3, 2013 Posted July 3, 2013 I've never tried dry rubs, i normally go for mop sauce and keep basting the meat as it cooks/smokes Rubs work great with smoking...mop sauces work great with BBQ grilling...if doing both (smoking first then grilling to finish) then rub first, and mop sauce for a glaze
Rawns Posted July 3, 2013 Author Posted July 3, 2013 I've never tried dry rubs, i normally go for mop sauce and keep basting the meat as it cooks/smokes Combine both. Dry rub for 24 hours then baste in sauce as it cooks. It's a double whammy of flavour!
JJonas Posted July 3, 2013 Posted July 3, 2013 Not a rub but you should try the sauces from this guy The Rib Man His food is so good lol at the names, must buy a bottle
JJonas Posted July 3, 2013 Posted July 3, 2013 Baste in cola. It's awesome, try it. Want to try this. What meat is best for this?
rickjames Posted July 3, 2013 Posted July 3, 2013 lol at the names, must buy a bottle Holy **** is ridiculously hot. It's not listed but if you ask nicely he'll sell you a bottle of the BBQ sauce which is by far my favourite.
Geoff Posted July 3, 2013 Posted July 3, 2013 Pork is best for this Indeed, you can even soak pork in cola overnight if you want. Makes it very tender.
JJonas Posted July 8, 2013 Posted July 8, 2013 I did chicken in cola over the weekend, was very well received.
HaleStorm Posted July 8, 2013 Posted July 8, 2013 Baste in cola. It's awesome, try it. Boiling a Ham in cola is good...better than honey roasting!
Rawns Posted July 8, 2013 Author Posted July 8, 2013 Boiling a Ham in cola is good...better than honey roasting! ^^ This. First discovered this a couple of years ago when watching Nigella Lawson work her magic. It has to be full sugar coke though, not diet, otherwise you won't get the awesome stick glaze when it's done! /drool
Geoff Posted July 8, 2013 Posted July 8, 2013 I have some South African friends, they insist on BBQing (or Braai'ing as they call it) properly. So the coke thing was one of the things I picked up from them.
