Have you looked into Parental Controls for those accounts? You can specify which applications are available and filter websites by allow list. It is certainly not an AD group policy management schema, however, if you are imaging the Macs you can include the user account in the image and deploy it to all Macs that would be available to your juveniles.

Using Command K and the smb://sharenameorip/directory/usershare where "user share" specifies the directory the user should be accessing should solve your issue with all the shared drives showing for the user. In short, specify the full path to the share(s) they should have permission to access. Once that is working, click the + in the lower left corner to add that address to the users "preferred" shares. After the shared drives mount on the Desktop as icons you can drag the icon to the Dock or to the Finder Sidebar which precludes the user from having to use Command+K to access their shares.
