I had the same issue, what I did was run the update under unattended mode. That did the trick for me. I had to do that for all the SP's for Exchange. Cptn_Smooth, did you ever fix your blank screen when running the SP3 for Exchange 2007 update on SBS2008? I have the same/similar issue. A weird screen with right bottom corner a botton, and some pictures which not show up. No clue why this is happening.
