Yes, your only limitations lie with the cable length and if its Passive or Active.

Your normally good for upto 5m on a Passive DAC.

thinking about buildind a SSD "san" box for a VDI project and considering all options.! this means i could iSCSI and "directly attach" to the "SAN" i build and buy the switches as i scale up.

Yes, I use Intel NICs if available as these play nicely with most DAC cables.

Your DAC choice has to be compatible with your switches first and the NICs in the servers happy with the length of the cable run.

Check with your DAC supplier that the cables will work with your switch before you buy them.

Use the shortest possible cables.
