Force mono printing via MCX

I'm pushing a printer out to 10.6 clients via MCX, which is all working fine. However, I need to somehow force the configuration to only print in mono as students keep racking up massive printing bills.

 

Is this possible? I tried monitoring the preference directories whilst setting the printer to mono in hope of finding a plist file being amended to no avail.
