[ms office - 2010] Change default Save format

I know how to change the default file format per application but surely there must be a way to do this globally??

 

Then again this is M$ and they don't like making things easy!

M$ haven't been that kind, while you can set it via GPO, you have to set it within each of the applications admx file. Thats about as global as they've allowed it to be.
