surely the fact that they'll do better in what we call poorer quality makes it better quality from the plants view? so actually it's good quality for the vines?

 

My (highly limited) understanding is that poor quality soil will result in less fruit produced per plant, since the plant has to work twice as hard to produce the fruit, it can't maintain as much of it.

Therefore less fruit produced = more expensive to produce same quantity of wine, explaining why the "best" wines etc cost so much!
