I have removed the tick from this box on the server and now clients which connect to the printers on the server, now see this the whole of this tab disabled, which is a good thing but the bad thing is that they cant print booklet layout something to do with EMF allowing, any idea how i can let them print in this way but not let them change anything because apparenty i think that they can change things on their workstation and it alters it on the server.

What about going through General tab > Printing Preferences?

 

On the server, make sure only Administrators can 'Manage Printers'. The Everyone group should only be able to 'Print' and 'Manage Documents' only (so tick to enable these). Leave 'Manage Printers' unticked. All deny entries should be unticked.

 

Alternatively, you may wish to remove the 'Everyone' group and add Security Groups in your network; Staff, Pupils, MIS etc...
