It will only allow users to save to the SharePoint Site's they have access to, and if they are in the "Members" or "Owners" group.

We generally have Student's AD group listed as a "Visitor" in the SharePoint site which only grants them read only rights.

If you are using Teams, students will also see those sites in the same place.

Correct, being in the Visitors group, just says you can't save there, same as if you had a read only folder on a network drive.

You can't remove it as it's part of Office. If you are not signed in to the office application, such as using 2019 or old versions, it wouldn't show any live connections, but with office 365 as the licence is for the user it automatically shows them their OneDrive and associated SharePoint sites, as users can open files via that interface if they are following that site.
