do any of you know if we can create a report to give me a list of all students with columns for each subject/course they take?

would need to use it as a livefeed

That looks like the table under - Students-Enrolment-Academic-Courses-Memberships

 

You would be best to do one report per year group so you can narrow down the courses so the columns aren't crazy.

Could also do a custom report like this and then have a pivot table looking at the output in excel or sheets.

 

Useful if you need more info like student ID that the memberships page doesn't give.
