SharePoint training and advice required

SharePoint.......

 

I'm setting up some test sites including one for holding IT support guides and I am struggling to workout how to ensure things are locked down correctly to stop unwanted access and to ensure only the relevant people/group have access to either the site(s) or sections of the site(s)

 

Can anyone recommend a company that provides help and advice on SharePoint or any useful online guides.
