Redirects not always working

I've got students accounts set with a home area set so they get an N drive which is directed to a server. Then in GPO, under Folder Redirection I've got "Documents" set to "Redirect to the user's home directory". Then, Pictures etc are all set to "Follow the Documents folder".

 

We keep getting kids saving to the appdata folder on the C drive because they click "Documents" or "Pictures" in the left panel when saving (rather than their N drive) which saves locally as the folders haven't redirected. The network drive always maps though. Is it worth pointing the "Documents" folder to the same place as their home drive is set to rather than telling it to use the home directory? Anyone else do it the way we currently are without issue? I'm assuming it's simply processing the GPO before the drive has mapped for some reason and therefore not managing to redirect properly?

From memory we used to set File Server documents to %homeshare% for Documents redirection, then like you said the other folders to follow the Documents folder. We're now redirected to OneDrive, however using the same principle essentially. You can also apply registry settings to doubly enforce folder redirection.
