Do you still need Hyper-v Quorum and which version of hyper-v was this not a requirement? The reason being is that my Quorum Lun sit right in the middle of the LUN space I want to reuse.

A Quorum is a requirement of clustering not Hyper-V there are now other ways of achieving HA with Hyper-V on server 2012R2 using other methods https://blogs.msdn.microsoft.com/mvpawardprogram/2012/11/05/windows-server-2012-hyper-v-high-availability-without-a-san/

Yep! Otherwise the clustered hosts won't know what to do if your network switch goes offline.
