As above really.

 

We haven't really got room to set a test network up to play with.

 

Can I set up a OU with just my self and a Win 10 computer and block any other group polices from applying?

 

Sorry but kind of new to playing around with group policies from fresh.

try a GPO loopback processing with replace in your OU which is located under Computer Configuration\Administrative Templates\System\Group Policy

Yes Block Inheritance on the OU :-) and as set loopback to replace as @davido38 points out.
