Site Structure

When i was first becoming familiar with the Edugeek package i didnt really understand sections, categories, items etc. As a result of this 'trial and error' period, the structure of my site is currently very confusing and unorganised. As ive now got to grips with it, i was wondering if it were possible to reset the structure of the template to its default data set? (so i can begin input again from scratch)! Is there an easy way to do this without effecting my graphics?
