One of our schools uses Google apps for edu, it got me thinking does anyone know where i might find out which country it stores emails in etc?

Pretty sure the answer is no, you can't. And the way it was explained to me is that there is no one drive/server/data farm with your data - it is dispersed around various facilities that could be anywhere. So in that sense "where is my email held" can't even be answered.

Access to data centers is very limited to only authorized select Google employees personnel.
