1. Are there different types of PDF files? (even though they are all .pdf)

 

 

If yes...

 

 

2. Would the program used to create the pdf have an effect on this?

 

 

3. Would said different .pdf file possible not be readable on certain programs like Adobe Reader but work fine on Google Docs?

There are Interactive PDFs [or Multimedia PDFs or Dynamic PDFs]

 

As the name suggests Interactive PDFs change what is displayed depending upon what the user does.

Are there different types of PDF files?

There are all sorts of PDFs - layered, composite (native Adobe Illustrator file inside of a PDF), interactive (as DaveP mentioned), PDF/X etc.
