Same gut reaction, install the 2nd AP but maybe look at disabling the 2.4GHz radio. Dial the power down on the APs and see how it goes. Potentially investigate changing the channel width to get that balance correct.

In relation to links from edge to cores - "Connections linking switches or switch stacks in hub rooms must connect back to the core server room using a minimum of 2x10Gbps with links taking different routes where possible" In the real-world unfortunately we likely won't have the ability to run 160MHz with clean RF and just the right devices so we won't get the top end advertised speeds on Wi-Fi in a classroom environment under full load.

Few initial things to look at tx power, channel width, the channels themselves (turning up the tx power can sometimes produce CCI) and PoE budget as I think these APs have some restrictions applied when using 802.3af. Aside from the signal do you have any issues with roaming or speed when clients are connected?
