Resolution Help

I'm wondering if anyone would be kind enough to help with the resolution & colour of a jpg image.

It is a family crest of mine but I only have a poor quality black & white copy & would love to be able to enhance the quality & add some colour.

I have attached the jpg of the crest, the helmet should be metallic silver, the lighter (underside) areas of the 'plummage' should be gold with the darker area being the same colour as the helmet, the phoenix should be red/orange & the background of the shield should be red. I would much appreciate any help with this as I haven't got a clue how to start! Many Thanks in advance.
