Exam account - Offline emails

Does anyone have any advice for offline email setup in exams? We have a functional skills exam later this week which users are required to research using the internet for the first x amount of minutes, we will use lanschool to block all internet access once the time is up however they require offline emails after this. Does anyone have any recommended configurations possibly for outlook? We are using a single mandatory profile for all functional skill accounts at the moment.

We installed Pegasus Email and let them use that, seemed easy enough for students to quickly grasp what they needed to do without the need for setting up a profile.
