Does anyone use electronic forms? We email a lot of letters, using Schoolcomms, with reply slips etc and have been asked if it would be possible for parents to email them back.

If you do then what do you do about signatures?

Down to your policy i guess. If you are happy to accept an email in lieu of signature. I've signed up to a few things recently where it states, that they will accept my reply as a form of electronic signature.

Not sure how that would stand up for a trip or financial thing, but just to say they want to attend a parents evening or other non-legal / non-financial purpose it should be okay.

You could set up a user to send these so that the replies go back to that user. Assuming you have a multi-user schoolcomms license.

Google forms is amazing. Comes as part of Google Apps for ED and creates graphs and charts or spreadsheets based on the answers. Seriously even if you don't need anything else from Google Apps this is still worth setting up just for Forms. After creating a Form you can post it to your site or mail it out and it gathers all the info back into one spot. Very handy.
