Print Server 2003 HP3600Printer

I have loads of HP 3600 Printers and want to lock them down to print onlu Black, I ajusted the setting on the printserver for the printer for everyone to just print only and selected Greyscale, but it still prints colour. Any ideas?? I cant find a setting on the printer either to just print Black, only the 3800 that I know of has this.

Do you have to set the "Default" settings as well - I found we had to do both places to force it on our printers (not same model)

The default setting is in Colour, It holds the settings if you go around one by one each PC and set it but then you got loads of users cant really do that.
