HOw do I update a certificate in Google Admin Console

I have just updated our Cert on our DC . All laptops etc can join the WiFi without any problems. However none of our Chromebooks can. I am very new to Google Admin/Workspace stuff so any assistance would be very much appreciated.

Devices > Networks > Certificates > Server Certificate Authority certificates

 

Your issue is going to be, that if the Chromebooks can't connect to the network without the certificate, then how will they connect to the network to obtain the updated certificate? Ideally you would be generating and deploying the updated certificate before you switch over to using it.
