Recommend enterpise class SSD for server?

I need a RAID 1 config for my new production server.  It has to be rock solid.  Can someone recommend an SSD?  What is the difference between 
PCI Express NVMe 4.0 x4 and Sas-24gbps?  PCI seems to be cheaper, is that bad?  Why?  What does the x4 mean for PCI anyway?  Do they just plug-in like any other SATA or SAS drive?  I see its NVMe but in a 2.5" form factor, is that all?
