There is a setting to change this tucked away in File > Options > Advanced > Link handing then Open hyperlinks from outlook in: Default Browser/Edge dropdown. But what is hidden is that in the latest ADMX Files, available at https://www.microsoft.com/en-us/download/details.aspx?id=49030 - you can set it to default browser as well. Available under (once you have imported the latest admx Templates) User Configuration > Policies > Microsoft Office 2016 > Links > "Choose which browser opens web links" You can set this as using the System Default Browser.
