We have a few older devices on iOS 12.0 and see they're not supported from here https://docs.microsoft.com/en-us/mem/intune/fundamentals/supported-devices-browsers If they're unsupported does that stop them being enrolled and managed? If so I may need to go down the Jamf route for iOS but would rather Endpoint Manager to keep everything in the one place (Windows/Android/iOS)
