Retiring and removing Edge server

Since we have completed our move to an Exchange hybrid environment, and 99% of our mailboxes are now O365 (we have kept a small number of specific mailboxes on prem), we have now pointed our MX records at O365 rather than our on-prem server.

 

I now feel that it is an appropriate time to retire and remove our Edge server, moving that role onto the main Exchange server (as it will no longer be receiving email directly).

 

I'm not entirely sure of the process for doing this (e.g. adding the role to the main Exchange server and making sure everything routes properly).

 

Can anyone offer any advice on this, including confirming that I'm doing the right thing by removing the Edge server (It is an old piece of hardware I would like to retire from use)
