VM Stuck at Starting 10% - HYPER-V

We had a VM using AVHDX files, which was growing exponentially - I tried to convert it to a VHDX but it only took an old snapshot from January 2018.. I've then re-established the parent links for all the increments (all 450 of them) but now I've set the VM to use the latest AVHDX once again, it's been stuck at "Starting 10%" for almost 2 months, with nothing budging it!

 

I've tried Stop-VM -Force and killing the VMWP.exe process for it, but to no avail.

 

Has anyone managed to fix this kind of issue before?!?
