I am sure I read somewhere that the spy community is reverting to typewriters in some cases because they’re not hackable.
But you can see what has been typed by looking at the ribbon.

No but each one has unique signature so can be traced. Also with single use ribbon you have a complete record of what's been typed, athough they were only used on electronic typewriters usually with daisy wheel.

I am sure MI5 et al are more than aware of the weaknesses. And I am sure they do such things based on risk. Typewriter ribbons require physical possession. Someone sat in their bedroom can’t hack a typewriter

Nor a computer that's not interacting with the rest of the world. Buy a computer and a printer, don't plug anything else into either one, keep them locked away, done. Anything involving typewriters is just stupid media stories, although I'd totally tell the press I was doing that and then not do it, no point telling your attackers your plans after all.
