I've just installed Ubuntu onto an old Acer of mine and every time I start it up, log in and try to use it it freezes - GUI and beyond. It was suggested that I change the graphics driver through 'Additional Drivers' to one of the nvidia ones, which I did. Now it loads into a basic(er) startup - 2D you could say. After I log in the icons are there but the desktop is black.

Depending how old your acer is, you might find that recent releases of ubuntu are too graphics-heavy for it. I've had success with 5+ year old laptops with xubuntu and lubuntu which are lighter versions of ubuntu.
