Disk2VHD keeps failing

So I'm trying to convert an old Windows 2003 server hosting Exchange 2003 (yeah I know, I've migrated everything off it, just making sure I have a plan B just in case I've missed anything...) but even if I disable the Information Store service Disk2VHD just randomly stops, no errors, nothing in the logs etc.

 

Is there an off-line tool I can use to capture a vhd(x) file for Hyper-v on Windows 2012r2 rather than doing it live?

That is the only one I know of, but hopefully one of the following ideas will be of assistance.

 

-Running Check Disk (and possibly Defrag) before making an image. This has resolved some problems in the past for me with imaging.

-Booting off of Windows PE and running the program.

Booting off PE disk is a good shout, I'll try that on Monday.
