Disabling "Printer properties" in MS word/ppt/excel etc..

We have setup a few colour printers only to print in Mono, which works fine but the pupils can get to the Printer properties (when going to print) and changing the print to colour - This doesn't effect the server side and when they log off it defaults back to Mono but the teachers don't want them to print colour at all.

Their permissions on the printer are set to "Print" only and when they select Printer properties the drivers\ports tab are disabled but still the (HP) option for colour settings is their?

I cant find anything in GP and a quick check on the net doesn't seem to bring anything up.
