Moodle - Student Signup Forms

Would anyone know of a Moodle course/plugin thing we could use to allow students to electronically sign up to something? For instance we have some enrichment courses that run periodically with limited spaces, and rather than go through all the paperwork, something electronic would be ideal.

Do you mean students new to your Moodle or existing students? If you have self enrolment enabled then you can restrict the number of students who can enrol themselves to a number you specify. So first come, first served.

I can't think of anything specific. But could you do a poll? "Do you want to attend this course?" Yes or No. I think you can set a limit on the amount of responses.

Existing students. It's nothing to do with course enrolment on Moodle, just something outside and it would be nice to embed such functionality into Moodle.

So the courses are not in Moodle then but outside? You could use a Feedback instance Feedback module - MoodleDocs
