can the default backup location be changed on an existing install?

Yes, it's a regkey something like... HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Microsoft SQL Server\

You can also use the SetSIMSBackupFolder.exe from the SIMS Setups folder but you have to run this in cmd

Just be aware the tool will only set the backup folder for that database - so if you have other databases, like FMS, you'll need to do it for each one. Also this does mean you'll find the odd MASTER backup still going to the old folder, just something to watch out for more then anything.
