Script to copy to C:\Backup (or similar)

I'm having issues with some laptops not mapping students My Documents correctly so when they login, their My Docs points to C:\Users\%USERNAME%\Documents.

 

Whilst I would like to solve the main cause, as a back up I would like to put in a script that, on log off, would copy everything from C:\Users\%USERNAME%\Documents to C:\Backup\%USERNAME%\Documents so students don't lose their work when they log off, the laptop is rebooted, and the delete user folders script kicks in.

 

However, I am very poor at scripting, so any help on this would be greatly appreciated!
