I installed Windows 8.1 on an ML110 G5 server last night and went to install the Hyper-V role but it told me I couldn't as the processor doesn't support SLAT.

It has VT turned on in the BIOS and runs 2012 R2 Hyper-V install just not when using 8.1 as the host o/s

It's a xeon processor machine but I don't have the exact model to hand.

VT-x doesn't mean it has EPT apparently, the 45nm Nehalems and up all do I beleive, but not all earlier ones do. Missing from intels whitepaper table for EPT are the 3000/3200s so it may mean it's not supported.

You only required EPT for remotefx on 2012 R2 from what I can see, 8.1 assumes all VMs will want it and look for it.

Aha thanks guys my google fu let me down earlier.

Shame as I was going to use 8.1 as the host in order to be able to run some stuff directly.
