Bare metal recovery test. What can I restore to?

Hi All,

I am currently creating a document to cover myself if the backups fail in the future!

I am proposing to try to restore certain random files at set intervals, as I do now, but document it as well so i can prove that i did it.

This is no problem but I want to be able to also to test our bare metal backups of our Server 2008 R2 servers. This causes problems as the Hard Drive needs to be as big as the Hard Drive on the server. Could I buy a massive drive and try the restore on a regular PC, has anyone done this?
