Strictly speaking yes, you're right in that you should only have one CNAME/A record for a host but in this case you're lucky because pop.gmail.com and smtp.gmail.com resolve at IP level to the same 2 IPs.
Thus meaning you can alias (CNAME) mail.yourdomain.com to either of them and it should certainly for now and I can't see them changing it work fine.
kim@prozac ~ $ host smtp.gmail.com
smtp.gmail.com is an alias for gmail-smtp-msa.l.google.com.
gmail-smtp-msa.l.google.com has address 188.8.131.52
gmail-smtp-msa.l.google.com has address 184.108.40.206
kim@prozac ~ $ host pop.gmail.com
pop.gmail.com is an alias for gmail-pop.l.google.com.
gmail-pop.l.google.com has address 220.127.116.11
gmail-pop.l.google.com has address 18.104.22.168

So, for the benefit of anyone else watching.
CNAME'd mail.mydomain.com to pop.gmail.com and both sending/receiving work fine from KMail but it does ask you to accept the SSL certificate because it's not issued to mail.mydomain.com.
